According to the National Institute of Diabetes and Digestive and Kidney Diseases, over 1.5 million adults are diagnosed with new cases of diabetes each year. One of the treatments for controlling the disease is diet. The second edition of the American Diabetes Association's cookbook provides over 200 easy-to-follow recipes with complete nutritional information. Focusing on basic or familiar dishes, the book has recipes for pie dough, salad dressing, and sauces, as well as entré es and desserts. Most of the recipes have five or fewer steps and require ingredients commonly found in grocery stores. To keep calories, fats, and cholesterol low, many of the recipes call for no-fat or low-fat dairy products, low-sodium broths, egg substitutes, and swapping ground beef with ground turkey breast. Yet, a surprising 87 recipes (primarily main courses) exceed the FDA's definition of low-fat (five grams or fewer of fat per serving).
